Everyone loves oatmeal

Boil 1 cup water add a pinch of salt. Fruit! Today we cut up a banana. Bring to a boil add 1/2 cup oats. Let cook for a few minutes then remove from element. Add maple sugar and milk to taste!

The 'I don't have a soup pot' chicken noodle soup

Hey folks! As I have mentioned to you all before am starting my Rad gypsy life fresh. Naturally this means I do not have a soup pot. The other day the monster and I bought a cheap a medium saucepan and a medium frypan. Both nonstick, horrible and bought at wallyworld. Mostly I did this because I know I can get something amazing at goodwill or thrifting with my mom.
My luck I feel the need for soup today, the 26th of December. After a long weekend maybe you too need a quick frypan of chicken noodle.

3 tablespoons butter
1 lb chicken thighs
1/2 cup chopped celery
1/2 cup Chloe's onion
4 large cloves of garlic
1/2 teaspoon poultry seasoning
Salt and pepper to taste
1 cupbaby carrots
2 boxes of chicken broth
60 or so oz
A few handfuls of noodles

In frypan heat butter on medium. Add celery, onion, and garlic....heat until translucent. Add seasonings. Cut chicken is quarters then add to pan.
Meanwhile in saucepan add one box of chicken broth and carrots and noodles of choice. Heat to boiling reduce heat to low. Cover
After chicken is almost fully cooked add rest of broth. Bring to boil reduce to low simmer and cover.
Cook for around 15 minutes then add carrot noodle mix to frypan. Raise temperature and bring to boil. Cut off heat and bam! Easy soup!

Chili shells with cheese

In a large pan heat about 1 tablespoon oil.
Add 1/4 cup chopped onions and 1 clove of garlic.
Cook until translucent add ground beef, brown drain fat.
Add 2 teaspoons chili powder
1 teaspoon cumin
1 can tomato sauce
Salt and Pelee to taste
Add 2 cups cooks pasta shells and about 1 cup shredded cheese.
Whalla chili pasta shells.

About a cup frozen blueberries. Fresh would be better but these were in my freezer and I'm on this use what I got kick. Where I am really trying to buy less to waste and horde less.

Coconut chicken curry

Coconut curry

1 onion diced
2 cloves garlic diced
3 tablespoons butter
Carmelize onions and garlic in butter




Aprox 6 bonless skinless chicken thighs diced into cubes

Place chicken in pan when carmeluzation is compleate

Add 2 large tablespoons curry powder
1 teaspoon salt
1/4 teasoon cayenne peper
1/4 teasoon ground Ginger




Mix well
Aprox 4 min till chicken juices run clear




Add 1 can coconut milk
Add 1 can diced tomatoes that have been purred with hand blender
2 1/2 tablespoons sugar




Let simmer for 35 minutes


Serve over rice!

Super EASY Mexican Rice

Super Easy Mexican rice

Heat 3 tablespoons oil in pot with tight fitting lid, add two cloves of minced garlic and 1/3 cup chopped onions. Cook until onions are translucent, add 1 cup rice. stir so rice does not burn, add 1/2 teaspoon salt, 1 teaspoon cumin, two cups chicken broth and one 6 oz can of tomato sauce. Bring to boil, lower temperature to simmer and cook rice until done around 20 minutes. Enjoy!

Enchilada Sauce Recipe

Tonight I am making a sort of spin on my own Enchiladas. I am using ground beef with a bit of burrito seasoning and cheese on the inside of the yummy enchiladas wrapped around a soft flour tortilla smothered in my home made enchilada sauce. I baked it at 350 for about 30 minutes.

Enchilada Sauce Recipe

-1 tablespoon olive oil
-two minced garlic cloves
-1/4 cup chopped onions
-1/2 teaspoon oregano
-2 teaspoons chili powder
-1/2 teaspoon dried basil
-1/8 teaspoon ground black pepper
-1/8 teaspoon salt
-1/2teaspoon ground cumin
-1 teaspoon dried parsley
-1/4 cup fresh organic salsa
-one can of tomato paste
-2 cups beef broth

Heat oil in sauce pan, add garlic and onion let cook for around 2 minutes. Add all seasonings. Stir, add tomato paste and broth, bring to boil, reduce heat to simmer for about 10 minutes. Use hand blender to mix sauce. simmer for another 15-20 minutes. Enjoy!

Meatball Minestrone Soup

Meatball Minestrone Soup



2 tablespoons olive oil
1 medium onion chopped
2 large cloves of garlic chopped
1 can of diced tomatoes in juices
1 can of tomato sauce
1 1/2 tablespoons Italian seasons
salt and pepper to taste
1 1/2 quart chicken broth
1/2 cup chopped green bean
2 medium white potatoes chopped
1 zucchini chopped
3 carrots chopped
1 can of beans rinsed and drained
2 cups cooked pasta
meatballs
1/2 lb ground chuck
1 egg 1/4 cup parm cheese
1/2 cup Italian breadcrumbs
- form into small round balls and drop into soup

In a heavy stockpot heat oil, add onion and garlic saute for five minutes, add seasonings, tomatoes and broth. Add veggies and bring to boil. lower temp and cover for around 1 hour, drop in meatballs, cook for 45 minuets. add cooked pasta. mix. serve!

Chicken artichoke florentine casserole

10 oz egg noodles
2lb diced chicken
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Italian seasoning
1 medium onion diced
2 cloves garlic chopped
1 can artichokes in water drained and chopped
1 10oz bag frozen spinach thawed
1 cup milk
2 eggs
2 cups or 8 oz pepper jack cheese
1/4 cup parmesan cheese

Preheat oven to 350
Cook noodles until tender.
In a large pan brown chicken, add salt pepper and urinal seasoning. When chicken is brown add onions and garlic. Sauté until chicken is cooked. Add artichokes and spinach to pan. Mix And remove from heat
In a separate bowl mix milk, eggs and cheese. Add to chicken mixture, mix And add milk eggs and cheese.
Top with breadcrumbs.

Place all in 3 quart casserole. Bake at 350 for 30 minutes covered. 15 minutes uncovered.

Irish Stew

Happy St. Paddies!!
Here is an amazing Irish Stew recipe after my husband told me no corned beef this year. Hope everyone has an amazing day!
IRISH STEW

When making beef stew of any kind I have pretty much have stopped using cooking oil. My choice is bacon grease.

I use a large heavy bottomed stainless steel stockpot.
I heat my element to medium and add a package of bacon chopped or cut with cooking sheers.
I buy cheap bacon for this, it seems to make more grease.
Brown bacon slowly so not to burn bacon or grease.
Drain bacon and reserve fat.
I am using a mesh colander and a glass 2 cup Pyrex measuring cup. Please use glass and not plastic as this will melt with hot grease.
The bottom of my stockpot looks amazing!
Leave all this yummy bits for the next step.
Chop two onions corse, and three large garlic cloves.
Add around three tablespoons of reserved bacon grease to stockpot on medium heat.
Add garlic and onions
Meanwhile chop about a cup of mushrooms.
I dice mine more due to the fact papa bear hates mushrooms.
Add mushrooms to onions and garlic and cook for a few minutes.
Remove all from pot.
Place in dish.
Next I add another three or so tablespoons of oil to stockpot.
When oil is warm add beef. Only a small amount at a time so not to over crowd. Beef will not brown and will boil if to many prices are in pot.
Using tongs is super rad!
I put my browned beef on top of onion mix.
After all meat is brown the bottom of my stockpot looks really Bitchin!
So next add red wine to pot.
Add one beer
Add two bay leaves
1/2 teaspoon pepper
1 teaspoon thyme
Add 1 teaspoon worch. sauce
Four cups broth
Two teaspoons tomato paste
Now bring all to boil, cover and lower temp to simmer, let your stew sit and get yummy for at least an hour.
After simmer I add these super cute taters. About a pound and a half.
And a few carrots. About three chopped .
Add salt to taste, I added around 1/2 teaspoon maybe more. I'm a salt and taste as I go kinda gal!
Raise temp to medium.
Let boil for five minutes then lower temp and simmer covered halfway
I skim off a bit of stew into a glass dish, I let it sit awhile to cool.
Add around 2 tablespoons cornstarch to cooling stew
Mix with wisk

Add to stew.
Stir while adding.
Bring stew back up to rapid simmer, allow to bubble a few minutes then return to resting simmer for around an hour halfway covered.
Check on stew every so often giving it a quick stir.
After an hour or so if your stew is urber watery just raise temp and stir to boil off excess for desired consistency.
Serve with crusty bread.
Enjoy!
