Meatball Minestrone Soup

Meatball Minestrone Soup



2 tablespoons olive oil
1 medium onion chopped
2 large cloves of garlic chopped
1 can of diced tomatoes in juices
1 can of tomato sauce
1 1/2 tablespoons Italian seasons
salt and pepper to taste
1 1/2 quart chicken broth
1/2 cup chopped green bean
2 medium white potatoes chopped
1 zucchini chopped
3 carrots chopped
1 can of beans rinsed and drained
2 cups cooked pasta
meatballs
1/2 lb ground chuck
1 egg 1/4 cup parm cheese
1/2 cup Italian breadcrumbs
- form into small round balls and drop into soup

In a heavy stockpot heat oil, add onion and garlic saute for five minutes, add seasonings, tomatoes and broth. Add veggies and bring to boil. lower temp and cover for around 1 hour, drop in meatballs, cook for 45 minuets. add cooked pasta. mix. serve!
