Faro Soup




-Thinly slice one onion
-Chop two celery ribs
-One small leak sliced in white portion only

In a large pot heat 3 tablespoons olive oil over medium heat.
Add onions, celery, and leak, bring to light brown caramelization.

Add
-one cup faro that has been rinsed and drained
- one can of borlotti beans also rinsed and drained
-1 tablespoon tomato paste

Add the above ingredients
Make sure tomato paste is evenly mixed.

Add 1 quart chicken stock
1/2 cup red wine
And salt and pepper to taste

Bring to boil, cover and lower temp to simmer. Cook for around 45 minutes. Check soup often to see if more liquid is needed.

Add
1 cup frozen peas
2 carrots chopped

Cover and let simmer for an hour or so. Check often if more liquid is needed. Add chicken stock or water when needed. Faro will suck all moisture out of soup!

When soup is finished, plate and add chopped basil and parmesan cheese.
